Abstract: Actualmente, el mercado de cerveza artesanal ecuatoriana dispone de un déficit en la producción de nuevos perfiles sensoriales, debido a que la producción de cerveza artesanal se realiza con materias primas importadas; por este motivo se buscó aprovechar la variedad microbiológica del Ecuador para conseguir nuevos cultivos de levaduras que brinden diferentes perfiles organolépticos a la cerveza. El trabajo se inició con la elaboración y colocación de trampas en Costa, Sierra y Amazonia ecuatoriana, seguido por el aislamiento utilizando medio de cultivo (YPD) específico para el crecimiento de levaduras, obteniendo algunos cultivos de levadura provenientes de varias zonas del país. Posteriormente, se elaboró una cerveza blonde ale fermentada con las levaduras silvestres obtenidas, y una vez embotellada la bebida, las muestras fueron evaluadas por un catador perteneciente al Programa de Certificación de Juez de la Cerveza (BJCP), que realizó una comparación sensorial entre la cerveza elaborada y la cerveza comercial, dando como resultado que M2 fue la cerveza que mejor se acercó a las características sensoriales ideales de la cerveza comercial.
Description: 6 Abstract At present, the Ecuadorian’s market of beer has a deficit in the production of new sensory profiles, because the production of craft beer is made with imported raw materials; for this reason, we sought to take advantage of the microbiological variety of Ecuador to get new farming’s or yeasts that provide different organoleptic profiles to beer. The work began with the preparation and placement of traps on the Coast, Mountains rang and Ecuadorian Amazon, followed by the isolation using culture medium (YPD) specific for growth of yeast to obtain some yeast culture from several areas of the country. Subsequently a blonde ale was prepared, fermented with the wild yeasts obtained, and once the drink was bottled, some samples were evaluated by a taster belonging to Beer Judge Certification Program (BJCP), who made a sensory comparison between elaborated beer and a commercial beer, giving as result that M2 sample was the beer that approached best the ideal sensory characteristics of commercial beer.
