Abstract: The world is in a critical situation and the lack of food is one of the problems that affects a large part of the world population, to solve this uncertainty, insects have begun to be studied as a sustainable alternative that allows to replace traditional protein sources and various products have been brought to the market such as balanced meals, flours, snacks, bread, pasta, etc. In this study, the osmotic dehydration process of Tenebrio Molitor was analyzed as a pretreatment for the convection drying process, ternary solutions containing sucrose and NaCl were used, the process was carried out at different temperatures, times and concentrations of the osmotic solution with the objective of evaluating the favorable conditions for an effective osmotic dehydration. At the concentration of 45% osmotic solution in a time of 5h and a temperature of 56 °C, the highest WL values (0.31 ± 0.05) (g/g i.s.) were obtained. This indicates that the osmotic medium is adequate to produce dehydration in mealworms. The WL values were only influenced in a statistically significant way by temperature, since concentration and time do not present significant values. In addition, the drying time was measured in insects that were previously subjected to osmotic pretreatment and insects that were not osmotically dehydrated, insects without osmotic pretreatment take 20 minutes to reach the optimum point of drying in a convection oven at 120 degrees in contrast insects with osmotic pretreatment take 10 minutes to reach the optimum point of drying in a convection oven at 120 degrees, therefore pretreatment saves half the drying time. The economic evaluation of drying with pretreatment and drying without osmotic pretreatment was also carried out. Osmotic dehydration as pretreatment of the drying process consumes 0.54 kW equivalent to 0.05 dollars and the cost of the raw material is 1.20 dollars giving a total of 1.25 dollars, in contrast to the drying process without pretreatment osmotic consumes 0.25 kW equivalent to 0.02 dollars. Therefore, the osmotic pretreatment increases the cost of the drying process by 1.23 dollars.
Description: El mundo se encuentra en una situación crítica y la falta de alimento es una de las problemáticas que afecta a gran parte de la población mundial, para dar solución a esta incertidumbre se ha comenzado a estudiar a los insectos como una alternativa sostenible que permita remplazar las fuentes de proteína tradicional y se han llevado al mercado diversos productos como balanceados, harinas, snacks, pan, pasta, etc. En este estudio se analizó el proceso de deshidratación osmótica del Tenebrio Molitor como pretratamiento para el proceso de secado por convección, se utilizó soluciones ternarias que contienen sacarosa y NaCl, el proceso se realizó a diferentes temperaturas, tiempos y concentraciones de la solución osmótica con el objetivo de evaluar las condiciones favorables para una deshidratación osmótica efectiva. A la concentración de 45% de solución osmótica en el tiempo de 5h y la temperatura de 56 °C, se obtuvo los valores de WL más altos (0,31 ± 0,05) (g/g i.s.). Esto indica que el medio osmótico es adecuado para producir deshidratación en los gusanos de la harina. Los valores de WL fueron únicamente influenciados de manera estadísticamente significativa por la temperatura, ya que la concentración y el tiempo no presentan valores significativos. Además, se midió el tiempo de secado en insectos que fueron previamente sometidos del pretratamiento osmótico y de insectos que no fueron deshidratados osmóticamente , los insectos sin pretratamiento osmótico tardan 20 minutos en alcanzar el punto óptimo de secado en horno de convección a 120 grados en contraste los insectos con pretratamiento osmótico tardan 10 minutos en alcanzar el punto óptimo de secado en horno de convección a 120 grado, por lo tanto el pretratamiento ahorra la mitad del tiempo de secado. También se realizó la evaluación económica del secado con pretratamiento y del secado sin pretratamiento osmótico. La deshidratación Osmótica como pretratamiento del proceso de secado consume 0,54 kW equivalente a 0,05 dólares y el costo de la materia prima es de 1,20 dólares dando un total de 1,25 dólares, en contraste el proceso de secado sin pretratamiento osmótico consume 0,25 kW equivalente a 0,02 dólares. Por lo tanto, el pretratamiento osmótico incrementa en 1.23 dólares el costo del proceso de secado
