Abstract: La fermentación es un proceso bioquímico en el que moléculas complejas se descomponen en moléculas más simples. En los granos de café y cacao se utiliza principalmente con el fin de eliminar la capa de mucilago, disminuir el contenido de agua del grano y ayudar a mejorar el sabor, la textura y el aroma del producto final. Se ha determinado que el uso de cultivos iniciadores puede mejorar las características organolépticas, reducir el tiempo de procesamiento y estandarizar la calidad del grano fermentado (Ferreira Silva et al., 2013). En Ecuador no hay estudios sobre el uso de caldos de fermentación como mejoradores de características organolépticas de granos fermentados; por lo tanto, el objetivo general del trabajo fue determinar las propiedades organolépticas de caldos de fermentación realizados en base a frutas para aplicarlos como posibles mejoradores de aroma y sabor de granos fermentados. Para esto se seleccionaron dos jugos con mejores características de aroma (Especial y Sierra), se trabajó con dos tasas de dilución (0.4 y 0.96) h−1 en biorreactor, se midió concentración de biomasa, grados Brix, pH y se realizó un análisis sensorial de aroma para cada jugo y tasa de dilución. En el resultado de análisis sensorial de los dos jugos a las dos tasas de dilución se obtuvieron aromas frutales, ácidos, fermentados y acaramelados, pero no existieron diferencias estadísticamente significativas en el perfil de aroma, tampoco se evidenció una fuerte asociación del aroma a caramelo o frutal con ninguna condición (jugo o tasa de dilución usada), por lo tanto no fue posible generar una caldo de fermentación idóneo para mejorar las características organolépticas de granos fermentados.
Description: Fermentation is a biochemical process in which complex molecules are broken down into simpler molecules. In coffee and cocoa beans, it is used mainly to eliminate the layer of mucilage, reduce the water content of the bean, and help improve the taste, texture, and aroma of the final product. It has been determined that the use of starter cultures can improve the organoleptic characteristics, reduce the processing time, and standardize the quality of the fermented grain (Ferreira Silva et al., 2013). In Ecuador there are no studies on the use of fermentation broths as enhancers of the organoleptic characteristics of fermented grains; Therefore, the general objective of the work was to determine the organoleptic properties of fermentation broths made based on fruits to apply them as possible aroma and flavor enhancers of fermented grains. For this, two juices with better aroma characteristics (Especial and Sierra) were selected, two dilution rates (0.4 and 0.96) h−1 were used in each bioreactor, dry biomass, Brix degrees, pH were measured and performed a sensory analysis for each juice and dilution rate. In the result of the sensory analysis of the two juices at the two dilution rates, fruity, acidic, fermented, and caramel aromas were obtained, but there were no statistically significant differences in the aroma profile; there was also no evidence of a strong association of caramel or fruity aroma with any condition (juice or dilution rate used), therefore it was not possible to generate an ideal fermentation broth to improve the organoleptic characteristics of fermented grains.
