Abstract: La investigación en curso partió de la interrogante ¿Cuáles son los riesgos biológicos al consumir alimentos mal preparados por los vendedores de los puestos de comida de un mercado del valle de Quito? Siendo su propósito fundamental fue identificar los factores de riesgo biológico con mayor incidencia en la población del valle de Quito, mediante la aplicación del método de evaluación indicado en la norma International Commission on Microbiological Specifications for Foods (ICMSF) para análisis microbiológico, para establecer una propuesta de control. Se determinaron las sub dimensiones de los factores de riesgo biológico con mayor incidencia e identificaron los factores biológicos, químicos, físicos, espacios de trabajo con riesgo muy elevado; entre los indicadores de riesgo con mayor nivel de incidencia se encontraron: poca utilización en el manejo de normas de inocuidad alimentaria de los vendedores de alimentos, mala reorganización de las áreas de trabajo y en la elaboración de normas de manejo de alimentos; junto con requerimientos de equipos de protección, aprendizaje, arreglo de espacios físicos, trato con personas, exposición a situaciones de impacto biológico. También se identificó un ritmo de trabajo acelerado con relación a la preparación de alimentos, por vender rápidamente su producción, realización de tareas de forma simultánea. Conclusión: Presencia de síntomas físicos y biológicos que denotan la posible existencia de trastornos de salud en los comensales, pudiendo afectar su desempeño laboral, la salud individual, familiar y colectiva de la población del valle, repercutiendo en la productividad del mercado municipal; por lo cual se recomienda aplicar la propuesta de control planteada.
Description: The current research started with the question: WHAT ARE BIOLOGICAL RISKS WHEN CONSUMING FOOD PREPARED BY THE SELLERS OF THE POSITIONS OF A MARKET IN THE QUITO VALLEY? Their main purpose was to determine the biological risk factors with the highest incidence in the population. of the valley of Quito, through the application of the evaluation method indicated in the International Commission on Microbiological Specifications for Foods (ICMSF) standard for microbiological analysis, to establish a control proposal. In this document the sub dimensions of the biological risk factors with the highest incidence were determined. Biological, chemical, physical factors, work spaces were identified with very high risk; Among the risk indicators with the highest level of incidence were: little use in the management of food safety standards of food vendors, poor reorganization of work areas and development of food management standards; together with requirements for protection equipment, learning, arrangement of physical spaces, dealing with people, exposure to situations of biological impact; It was also possible to identify that there is an acceleration in the working rhythm in the work environment, work quickly in the preparation of food by quickly selling its production, attention to multiple tasks at the same time. The most important conclusion was the presence of physical and biological symptoms that denote the possible existence of medical disorders in the diners, that if the proposed control proposal is not applied, the work performance will be affected, physical, personal, family and social population of the valley, with the consequent decrease in economic productivity - labor and the quality of production used in the municipal market.
