Abstract: La industria láctea genera un subproducto altamente contaminante denominado suero de leche, el cual se obtiene en el proceso de fabricación de queso, el mismo que posee además excelentes propiedades alimenticias provenientes de su contenido en lactosa, proteínas, vitaminas y sales minerales. Tomando en cuenta su gran contenido de nutrientes para el ser humano, es importante que las industrias recuperen el suero de leche, creando diversos procesos para así obtener productos del mismo. Eliminando de esta manera la contaminación que este subproducto genera al ambiente, revalorizándolo en la fabricación de un nuevo alimento. Por las razones expuestas anteriormente, el siguiente trabajo propone aprovechar las propiedades nutricionales que ofrece el suero de leche elaborando una bebida hidratante, fortificada con la ayuda de los componentes presentes en la Maracuyá (Passiflora edulis); que se utilizó como saborizante. Para alcanzar el objetivo deseado fue necesario caracterizar las materias primas utilizadas, luego se llevó a cabo las pruebas experimentales de la elaboración de la bebida para determinar el nivel óptimo de suero de leche en la formulación a emplear en la bebida hidratante; se realizaron tres formulaciones, cada una con diferentes cantidades de suero de leche a fin de encontrar la formulación más adecuada que cuente con buenas características organolépticas y nutricionales. Posteriormente se realizó el análisis de la bebida terminada, el cual incluyó estudios de laboratorio tanto físico-químico como microbiológicos. Se obtuvo una bebida hidratante que cumple con los parámetros establecidos en la norma NTC 3837; norma bajo la cual se realizó esta investigación debido a que en Ecuador no existe una norma para bebidas hidratantes, y a su vez de agrado para los posibles consumidores. Por último se realizó el escalamiento industrial para el desarrollo de la bebida hidratante en el cual se muestra un análisis de los costos de fabricación y su estudio de pre factibilidad.
Description: The dairy industry generates a highly polluting by-product called whey, which is obtained in the cheese making process, which also has excellent nutritional properties from its content of lactose, proteins, vitamins and mineral salts. Taking into account its great content of nutrients for human beings, it is important that industries recover whey, creating various processes to obtain products from it. Eliminating in this way the contamination that this by-product generates to the environment, revaluing it in the manufacture of a new food. For the reasons explained above, the following work proposes to take advantage of the nutritional properties offered by whey by making a moisturizing drink, fortified with the help of the components present in the Passion Fruit (Passiflora edulis); which was used as a flavoring. To achieve the desired objective it was necessary to characterize the raw materials used, then the experimental tests of the elaboration of the drink was carried out to determine the optimum level of whey in the formulation to be used in the moisturizing beverage; Three formulations were made, each with different amounts of whey in order to find the most suitable formulation that has good organoleptic and nutritional characteristics. Subsequently, the analysis of the finished beverage was carried out, which included both physical-chemical and microbiological laboratory studies. A moisturizing beverage was obtained that complies with the parameters established in the norm NTC 3837; norm under which this research was carried out because in Ecuador there is no norm for moisturizing drinks, and at the same time it is liked by the possible consumers. Finally, the industrial scaling was carried out for the development of the hydrating drink in which an analysis of the manufacturing costs and its pre-feasibility study is shown.
