Resumen : | El intercambio es una de las actividades que el hombre realiza
fuera de su hogar, y desde la antigüedad se utilizó este
mecanismo como vehículo para satisfacer todo tipo de
necesidades. De ahí que el hombre usa el “trueque” como uno
de los primeros mecanismos de intercambio, para conseguir
alimentos, utensilios, etc. Tenemos así que los alimentos fueron
uno de los primeros bienes del hombre en ser negociados con la
modalidad del trueque, para abastecerse de gran variedad para
el consumo. Con el tiempo, se establecen lugares específicos
para realizar esta gestión y el intercambio se convierte en
comercialización con el uso de la moneda. Así es como se
originan las plazas de mercado; las cuales tuvieron una gran
incidencia en América Latina. En las ciudades fundadas por
españoles se podían encontrar alrededor de la plaza principal el
centro comercial, el centro financiero y el centro administrativo.
Así la comercialización de productos ocupaba plazas, aceras,
viviendas antiguas, calles, y causaba todos los problemas
sociales y sanitarios que esta actividad acarreaba.
A la par del crecimiento de la ciudad ha sido deber de los
municipios construir mercados para dotar a los diferentes
sectores con este servicio, sin embargo, no siempre se lo hizo de
forma ordenada, ya que la mayoría de mercados se encuentran
hacia el centro de la ciudad, dejando así sectores sin servicio, o
con un servicio deficiente y, en otros casos, sobreponiendo
áreas de influencia entre mercados.
Al habar de intercambio se establece un sistema compuesto por
tres actividades que se dan en diferentes espacios. Estos son:
Producción, Gestión y Consumo e Intercambio.
Una vez que estos procesos se articulan, conforman el sistema
de comercialización de alimentos.
Para que el sistema funcione, cada uno de sus elementos cuenta
con actores desde la producción, quienes siembran, riegan y
cosechan el producto para luego ser seleccionado, empacado y
distribuido, hasta llegar a centros de venta donde compradores
aparecen para adquirir los productos y satisfacer sus
necesidades.
Para que este sistema funcione de forma adecuada es necesario
contar con espacios óptimos que cumplan con normas de
seguridad, higiene, procesos de calidad y control, etc.
Actualmente, el sistema de comercialización de alimentos de los
diferentes centros de la ciudad no cumple su función a cabalidad
debido a la carencia, déficit o penuria de dichos establecimientos.
Al analizar los componentes del sistema de comercialización,
también se hablará de la problemática actual de cada uno de
ellos. Along with the growth of the city, it has been the duty of the municipalities build markets to endow the different sectors with this service, however, it was not always done orderly manner, since most markets are towards the center of the city, thus leaving sectors without service, or with poor service and, in other cases, superimposing Areas of influence between markets. When there is exchange, a system composed of three activities that take place in different spaces. These are: Production, Management and Consumption and Exchange. Once these processes are articulated, they make up the system of food marketing. For the system to work, each of its elements counts with actors from production, who sow, water and they harvest the product to be selected, packaged and distributed, until you reach sales centers where buyers appear to acquire the products and satisfy their needs For this system to work properly it is necessary have optimal spaces that comply with standards of safety, hygiene, quality processes and control, etc. Currently, the food marketing system of the different centers of the city does not fulfill its function fully due to the lack, deficit or shortage of said establishments. By analyzing the components of the marketing system, the current problems of each one of them will also be discussed they. |
