Abstract: | Around the world, animals have been used as in vivo fermenters, for example, the Indian civet which is used to ferment coffee beans. This type of process provides a unique organoleptic quality to the final product; Studies affirm that the microbiota that inhabits the gastrointestinal system of some mammals, together with the physicochemical conditions of the environment, give rise to fermentation processes that provide special qualities to coffee beans. In this sense, and as an alternative to avoid the use of animals for these processes, the objective of this study was to design and evaluate in vitro gastrointestinal systems, based on the microbiota of gastrointestinal systems of omnivorous and herbivorous animals in vivo, for fermentation of coffee. Therefore, in this work, in vitro gastrointestinal systems were designed and implemented, to later make comparisons between the organoleptic profile of fermented coffee in in vitro gastrointestinal systems with the profiles of coffee fermented in animals and conventionally fermented coffee (without the use of animals and with the natural microbiota present in the coffee pulp). Coffee fermented in in vitro gastrointestinal systems was found to exhibit unique traits in terms of organoleptic profile and sensory ratings like those of coffee fermented in an in vivo gastrointestinal system. Description: | En diversos lugares del mundo se ha utilizado animales como fermentadores in vivo, por ejemplo, la civeta de la India que es utilizada para fermentar granos de café. Este tipo de procesos brindan una calidad organoléptica única al producto final; estudios afirman que la microbiota que habita en el sistema gastrointestinal de algunos mamíferos junto a las condiciones fisicoquímicas del medio, dan lugar a procesos de fermentación que brindan cualidades especiales a los granos de café. En este sentido, y como alternativa para evitar el uso de animales para estos procesos, el objetivo de este estudio fue diseñar y evaluar sistemas gastrointestinales in vitro, en base a la microbiota de sistemas gastrointestinales de animales omnívoros y herbívoros in vivo, para fermentación de café. Por tanto, en este trabajo se diseñaron e implementaron sistemas gastrointestinales in vitro, para posteriormente realizar comparaciones entre el perfil organoléptico de café fermentado en los sistemas gastrointestinales in vitro con los perfiles de café fermentado en animales y café fermentado convencionalmente (sin el uso de animales y con la microbiota natural presente en la pulpa de café). Se determinó que el café fermentado en sistemas gastrointestinales in vitro presenta rasgos únicos en cuanto al perfil organoléptico y calificaciones sensoriales similares a las de un café fermentado en un sistema gastrointestinal in vivo. Aunque el café fermentado en sistemas gastrointestinales in vitro no logró igualar el puntaje de un café fermentado convencionalmente, se podría considerar un café de especialidad. |
