Resumen : El TURISMO ha sufrido en la última mitad de este siglo, más cambios que a lo largo de toda su historia. Para nadie es desconocido que este "Boom" se dio al final de la Segunda Gue rra Mundial, siendo su motivo principal: los perfeccionamientos que se hicieron en las aeronaves, aunque el fin por el cual se realizaron está muy lejos de las verdaderas motivaciones de la actividad turística. Desde los inicios del turismo, pasando por el concepto de masificación creado por Thomas Cook en el último cuarto del s_i glo pasado, han ocurrido transformaciones graduales hacia un cambio evolutivo que nos han llevado hasta donde estamos en es; te momento, como la actividad turística necesaria y generalmen te no elitista. El haber logrado una alta seguridad en los aviones, fué un factor decisivo para la masificación total del turismo. Este medio de transporte aéreo ayudó a que las tarifas sean más bajas y al alcance de no tan poca gente. La oferta hotelera aceptó todos los cambios que los turistas estaban buscando. La hotelería cambió junto con el turismo. Desde la antigua posada que prestaba servicio a caminantes a principios de nuestra era cristiana, la evolución del servicio de alojamiento y el de alimento, ha sido bastante notoria. La aparición de la "Taberna" cambió el estilo típico de las reu niones, mejorando desde cualquier punto de vista el servicio y la calidad de la alimentación ofrecida, brindando de esta manera mayores satisfacciones a los comensales. Los visitantes no sólo buscaban un techo donde poder pasar la noche, también querían satisfacer su hambre y su sed.
